Approximately 99% of barley produced domestically is the variety known as “non-glutinous barley,” making glutinous barley extremely rare.
Glutinous barley is rich in dietary fiber (about 18 times that of white rice and about 3 times that of brown rice), and is particularly notable for its high content of soluble dietary fiber (beta-glucan). Mix it into rice, boil it, or use it in cooking. Since the barley is processed to resemble rice grains, it blends seamlessly during cooking and can be enjoyed without any noticeable texture difference.

Usage Instructions
[How to Cook Glutinous Barley Rice] For every 1 cup (150g) of rice, use about 3 tablespoons (45g) of glutinous barley. Add water generously, using about 30ml (2 tablespoons) more water per tablespoon of glutinous barley. Soak in water for about 30 minutes before cooking. After cooking, let it steam a little longer (about 5 minutes longer) before serving. [How to Prepare Boiled Barley] Boil the barley in plenty of water for about 15-20 minutes.
・Mix boiled barley into ground meat for hamburgers, meatballs, gyoza, stuffed cabbage rolls, dry curry, etc.
・Use as a salad topping or mix into croquettes.
・Also use in soups, risotto, pot-au-feu, stews, and other simmered dishes.
